Sitting in our homes, passing this quarantine away, we often come across situations where we are not famished, and yet we want something to satisfy our evening much. On such days, one looks for something that is tasty and refreshing, but doesn’t feel very heavy on your stomach. Tamil style mixture recipe is a perfect snack for such situations. Made out of Besan and an arsenal of spices that bring about a ton of flavours to such a light weight dish, this dish proves to be one of the best snacks one can have.

Recipe Instructions of Mixture Recipe:
Preparation:
- Add 2 cups of Besan (Gram Flour) to a fresh bowl.
- Add ½ a cup of rice flour into the bowl.
- Add ½ teaspoon salt to the bowl.
- Put 1 teaspoon of slightly crushed Ajwain seeds into the mix.
- Add a pinch of Hing into the bowl.
- Pour 1 tablespoon oil inside the bowl.
- Add ¼ teaspoon turmeric powder into the mix.
- Combine the ingredients inside the bowl well.
- Add enough water so as to knead a dough.
- Knead the flour mixture into a dough.
- Your soft dough is now prepared.
- Choose the stencil with small holes for your sancha maker machines. Put 1 teaspoon oil inside of your machine.
- Give your dough a cylindrical shape so as to fit it inside the Sancha maker machine. Ensure the lid has closed properly.
- Press the back end of the machine so as to push out noodles of our dough into a pan full of hot oil.
- Flip and fry the noodles from both sides.
- When crispy, take these noodles out and place them on a plate.
- Take another fresh bowl and add 1 cup Besan (Gram Flour) to it.
- Add 1/3rd of cup of rice flour to the bowl.
- Add 1 teaspoon of salt to the bowl.
- Put ¼ teaspoon baking soda into the mix.
- Add 1 teaspoon mirchi powder to the bowl.
- Add a pinch of Hing.
- Add enough water to as to make a batter.
- Mix well with a whisking tool.
- Whisk further to make the batter smooth.
- Ensure there are no lumps in your smooth batter.
- The batter should have a thick flowing consistency.
- Take a ladle with holes on its face.
- Pass batter through the holes of your ladle. Spread and tap slowly with another spoon for even spread.
- After all the boondis are inside the frier, keep stirring so as to fry them evenly.
- When they turn gold and crispy, take them out of the frier.
- Bondi is ready to be added into the mixture.
- Inside hot oil, fry some peanuts.
- Inside hot oil, fry some cashews. Take them out when they turn golden and develop a bit of crunch.
- Inside hot oil, fry some pre fried gram dal till it gets crispier.
- Add a few curry leaves to the hot oil to turn them crispy.
- Take the Besan noodles prepared earlier and crush them into smaller pieces using your hands.
- Add the already prepared Bondi, fried gram dal, Peanuts, cashews and the curry leaves.
- Add 1.5 teaspoon mirchi powder and ½ teaspoon salt from over the top.
- Mix everything well.
- Delicious mixture is ready to serve your munch with a crunch.
