Recipe Instructions of Tamilnadu Hotel Idli Sambar Recipe:
Preparation:
- Take ½ a cup cleaned Toor dal and add it to a pressure cooker.
- Add 1 cup full of chopped pumpkin inside the cooker.
- Add sufficient water so as to cook these ingredients.
- Cover the cooker with its lid and wait for 4 whistles.
- The ingredients inside the cooker would have cooked well.
- Mash the cooked Pumpkin and Toor Dal till you get a paste.
- The paste is ready.
- Take a fresh pan and put ½ a tablespoon of oil into it.
- Add 1 teaspoon chana dal to the pan.
- Put ½ a teaspoon of cumin seeds into the mix.
- Add 1 teaspoon coriander seeds to the pan.
- Take 6 pieces of red chilli and add it to the pan.
- Fry the ingredients inside the pan on a low flame.
- Allow them to cool. When cooled completely, transfer them into a blender.
- Blend these fried ingredients well.
- Blended together, these fried elements form a delicious masala.
- In a fresh pan, add 1 tablespoon oil.
- Add ½ a teaspoon mustard seeds to the mix.
- Add 1/8th teaspoon methi seeds to the pan.
- Put in a pinch of Hing.
- Add 2 Red chillies to the pan.
- Add a few curry leaves from the top.
- Wait for oil to splutter.
- Add 1 full chopped onion into the pan.
- Saute the mix for a minute.
- Add 1 full chopped tomato into the pan.
- Add ¼ teaspoon turmeric powder to the mix.
- Put 1 teaspoon salt to the pan.
- Add 1 green chilly for added spice.
- Saute the ingredients well.
- Add the flavoursome sambar masala that we prepared earlier into the pan.
- Add the mashed Toor dal paste.
- Take ½ a cup Tamarind extract and pour it into your sambhar.
- Add water as required.
- Mix the water well with other ingredients.
- Let the contents in the pan, boil for 4-5 minutes.
- Add a few coriander leaves into the pan.
- Add 1 teaspoon ghee to the pan.
- Your delicious sambhar is ready.
- Transfer it into a container for serving.
