Recipe Instructions of Tamilnadu Hotel Idli Sambar Recipe:

Preparation:

  1. Take ½ a cup cleaned Toor dal and add it to a pressure cooker.
  2. Add 1 cup full of chopped pumpkin inside the cooker.
  3. Add sufficient water so as to cook these ingredients.
  4. Cover the cooker with its lid and wait for 4 whistles.
  5. The ingredients inside the cooker would have cooked well.
  6. Mash the cooked Pumpkin and Toor Dal till you get a paste.
  7. The paste is ready.
  8. Take a fresh pan and put ½ a tablespoon of oil into it.
  9. Add 1 teaspoon chana dal to the pan.
  10. Put ½ a teaspoon of cumin seeds into the mix.
  11. Add 1 teaspoon coriander seeds to the pan.
  12. Take 6 pieces of red chilli and add it to the pan.
  13. Fry the ingredients inside the pan on a low flame.
  14. Allow them to cool. When cooled completely, transfer them into a blender.
  15. Blend these fried ingredients well.
  16. Blended together, these fried elements form a delicious masala.
  17. In a fresh pan, add 1 tablespoon oil.
  18. Add ½ a teaspoon mustard seeds to the mix.
  19. Add 1/8th teaspoon methi seeds to the pan.
  20. Put in a pinch of Hing.
  21. Add 2 Red chillies to the pan.
  22. Add a few curry leaves from the top.
  23. Wait for oil to splutter.
  24. Add 1 full chopped onion into the pan.
  25. Saute the mix for a minute.
  26. Add 1 full chopped tomato into the pan.
  27. Add ¼ teaspoon turmeric powder to the mix.
  28. Put 1 teaspoon salt to the pan.
  29. Add 1 green chilly for added spice.
  30. Saute the ingredients well.
  31. Add the flavoursome sambar masala that we prepared earlier into the pan.
  32. Add the mashed Toor dal paste.
  33. Take ½ a cup Tamarind extract and pour it into your sambhar.
  34. Add water as required.
  35. Mix the water well with other ingredients.
  36. Let the contents in the pan, boil for 4-5 minutes.
  37. Add a few coriander leaves into the pan.
  38. Add 1 teaspoon ghee to the pan.
  39. Your delicious sambhar is ready.
  40. Transfer it into a container for serving.
