🌿 Ingredients Needed (for 1 batch):

  • 1 kg Ripe Tomatoes – gives natural sweetness & tang

  • 6–7 Garlic cloves (chopped) – adds rich flavor

  • 1 medium Onion (finely chopped, optional) – for extra depth

  • 1 inch Ginger (optional) – balances flavors

  • 1 Green Chili (optional, mild spice) – optional kick

  • ½ cup Vinegar – natural preservative & tanginess

  • 4 tbsp Sugar (adjust to taste) – balances acidity

  • 2 tsp Salt (or as required) – enhances taste

  • 1 tsp Red Chili Powder – adds color & mild heat

  • Water – as required

👩‍🍳 Step-by-Step Preparation:

1️⃣ Blanch Tomatoes – Wash, score, and boil tomatoes for 3–4 minutes. Transfer to cold water, peel the skin, and chop.

2️⃣ Cook the Base – Heat a pan and add chopped tomatoes, garlic, onion, ginger, and green chili. Cook until soft and mushy.

3️⃣ Make the Puree – Let it cool slightly, then grind into a smooth paste. Strain to remove seeds and fibers for a silky consistency.

4️⃣ Season & Simmer – Pour the puree into a heavy-bottomed pan. Add vinegar, sugar, salt, and red chili powder. Simmer on low heat for 20–25 minutes until the sauce thickens.

5️⃣ Cool & Store – Allow to cool fully. Transfer into sterilized glass bottles. Refrigerate – stays fresh for up to 1 month.
