Recipe Instructions of Ukkarisida Akki Rotti Recipe:

Preparation:

  1. To a fresh pan, add 1 cup water.
  2. Add 1 tablespoon oil to the water.
  3. Put ½ a tablespoon salt into the pan.
  4. Mix these ingredients well and let them boil.
  5. Now add 1 cup rice flour in to the pan.
  6. Mix the ingredients well.
  7. The rice flour will absorb all the water in the pan to become dense.
  8. Let it simmer for 2 minutes.
  9. Now you have a moist flour prepared in your pan.
  10. Transfer this prepared ingredient to a fresh bowl.
  11. Wet your hands and start kneading the dough.
  12. Remember not to add any extra water.
  13. You will have prepared a soft non sticky dough.
  14. Take a small sized ball of dough in your hands.
  15. Roll this ball on a flat surface with a dough roller.
  16. With a sharper end of any round utensil, make a perfectly round rotti.
  17. Roll this rotti into a thinner round roti. Use the roller for evenness.
  18. Your flat Rotti is ready to be put on a Tawa.
  19. Place it on a hot Tawa.
  20. Take a wet cloth and wipe it on any one side of your rotti.
  21. Cook for about a minute.
  22. Your rotti should half cooked by now.
  23. Using a gripper or spatula, replace your rotti and subject it directly to the flame.
  24. The Rotti puffs up into a balloon.
  25. Flip it over to cook from both sides.
  26. Serve your Ukkarisida akki rotti fresh and hot with any pulse or curry.
