Preparation:
- To a fresh pan, add 1 cup water.
- Add 1 tablespoon oil to the water.
- Put ½ a tablespoon salt into the pan.
- Mix these ingredients well and let them boil.
- Now add 1 cup rice flour in to the pan.
- Mix the ingredients well.
- The rice flour will absorb all the water in the pan to become dense.
- Let it simmer for 2 minutes.
- Now you have a moist flour prepared in your pan.
- Transfer this prepared ingredient to a fresh bowl.
- Wet your hands and start kneading the dough.
- Remember not to add any extra water.
- You will have prepared a soft non sticky dough.
- Take a small sized ball of dough in your hands.
- Roll this ball on a flat surface with a dough roller.
- With a sharper end of any round utensil, make a perfectly round rotti.
- Roll this rotti into a thinner round roti. Use the roller for evenness.
- Your flat Rotti is ready to be put on a Tawa.
- Place it on a hot Tawa.
- Take a wet cloth and wipe it on any one side of your rotti.
- Cook for about a minute.
- Your rotti should half cooked by now.
- Using a gripper or spatula, replace your rotti and subject it directly to the flame.
- The Rotti puffs up into a balloon.
- Flip it over to cook from both sides.
- Serve your Ukkarisida akki rotti fresh and hot with any pulse or curry.
