Recipe Instructions of Perfect Puliyodharai Recipe/Temple Style Puliyodharai Rice:
Preparation of Puliyodharai Recipe:
- Take a fresh pan and add 1 teaspoon of Chana dal to it.
- Add 1 teaspoon of Urad dal to the pan.
- Put ¼ teaspoon of pepper into the mix.
- Add 1 teaspoon of coriander seeds to the pan.
- Add ¼ teaspoon of methi seeds to the pan.
- Add 4 red chillies to the pan for spice.
- Roast the ingredients inside the pan on a low flame.
- When the roasting is complete, allow the ingredients to cool down. Transfer them to a blender when cooled.
- Blend the mixture inside a blender mixer to prepare the Puliyodharai Masala.
- Take a fresh pan and add 2 tablespoons of oil to it.
- Add 3 tablespoons full of peanuts into the pan.
- Add 1 teaspoon Chana Dal into the mix.
- Follow this by adding ½ teaspoon of urad dal into the mix.
- Take ½ a teaspoon of mustard seeds and add it to the mix.
- Saute and splutter the ingredients of the pan.
- Put in a pinch of Hing into the pan.
- Add another red chilli to the mix.
- Chop up 1 green chilli to put inside the pan.
- Add a few curry leaves into the pan.
- Saute the ingredients of the pan well.
- Add the Puliyodharai Masala that we blended earlier.
- Add 1 teaspoon of salt to the pan.
- Let the ingredients cook to create a mesh of flavours.
- Pour 1 cup full of Tarmarind Extract into the pan.
- Add ¼ teaspoon Turmeric powder into the mix.
- Stir constantly with a spatula to blend flavours.
- Add ½ a teaspoon Jaggery into the pan and mix it well.
- Let the curry boil for about 8 minutes.
- The oil starts to separate itself from the rest of the curry.
- You can start seeing the separate layers working together to make the dish.
- Take a bowl of cooked rice and add this freshly prepared Puliyodharai on top of them.
- Mix in the curry with the prepared rice till you get an evened out texture.
- Your perfect puliyodharai is ready to be served.
