One such dish is the kannada special turmeric rice which is also known is Puliyodharai.

Puliyodharai is a special rice dish prepared in the temples of the southern states of India. Puliyodharai is known for its subtle yet incredible tastes that comes out of the simplest of food items available in any household kitchen. The use of these ingredients is done in a manner that makes use of their individual flavours in the most efficient way.

Puliyodharai is a dish that is linked by a great mass of people as a spiritual element. Hence it is necessary to maintain its authenticity. Recipe Instructions of Perfect Puliyodharai Recipe/Temple Style Puliyodharai Rice:

Preparation of Puliyodharai Recipe:

  1. Take a fresh pan and add 1 teaspoon of Chana dal to it.
  2. Add 1 teaspoon of Urad dal to the pan.
  3. Put ¼ teaspoon of pepper into the mix.
  4. Add 1 teaspoon of coriander seeds to the pan.
  5. Add ¼ teaspoon of methi seeds to the pan.
  6. Add 4 red chillies to the pan for spice.
  7. Roast the ingredients inside the pan on a low flame.
  8. When the roasting is complete, allow the ingredients to cool down. Transfer them to a blender when cooled.
  9. Blend the mixture inside a blender mixer to prepare the Puliyodharai Masala.
  10. Take a fresh pan and add 2 tablespoons of oil to it.
  11. Add 3 tablespoons full of peanuts into the pan.
  12. Add 1 teaspoon Chana Dal into the mix.
  13. Follow this by adding ½ teaspoon of urad dal into the mix.
  14. Take ½ a teaspoon of mustard seeds and add it to the mix.
  15. Saute and splutter the ingredients of the pan.
  16. Put in a pinch of Hing into the pan.
  17. Add another red chilli to the mix.
  18. Chop up 1 green chilli to put inside the pan.
  19. Add a few curry leaves into the pan.
  20. Saute the ingredients of the pan well.
  21. Add the Puliyodharai Masala that we blended earlier.
  22. Add 1 teaspoon of salt to the pan.
  23. Let the ingredients cook to create a mesh of flavours.
  24. Pour 1 cup full of Tarmarind Extract into the pan.
  25. Add ¼ teaspoon Turmeric powder into the mix.
  26. Stir constantly with a spatula to blend flavours.
  27. Add ½ a teaspoon Jaggery into the pan and mix it well.
  28. Let the curry boil for about 8 minutes.
  29. The oil starts to separate itself from the rest of the curry.
  30. You can start seeing the separate layers working together to make the dish.
  31. Take a bowl of cooked rice and add this freshly prepared Puliyodharai on top of them.
  32. Mix in the curry with the prepared rice till you get an evened out texture.
  33. Your perfect puliyodharai is ready to be served.
