Preparation /Follow the Steps:

  1. Let us start preparing our perfect Kerala Idiyappam. First take 1 cup rice flour.
  2. Sieve the rice flour into a fresh bowl.
  3. Add ¼ tablespoon salt into the bowl.
  4. Add 1 tablespoon oil.
  5. Pour water that has been moderately warmed.
  6. Mix it all well. The mixture would start getting doughy.
  7. Knead the dough well.
  8. Our soft dough is ready.
  9. Now its time to give our dough a shape. Take a noodle mould and open its back.
  10. Pour ½ tablespoon oil into the Noodle mould for lubrication.
  11. Take some dough and turn it into a cylindrical shape.
  12. Insert the mould into the noodle mould.
  13. Close its back tightly.
  14. Take an Idli plate and press our noodled dough onto the plate.
  15. Place the plates inside an Idli cooker.
  16. Let it cook for 10 minutes.
  17. Add ¼ cup coconut pieces into a mixer-grinder.
  18. Add ½ cup water.
  19. Blend it well till you get a nice, soft and creamy mix.
  20. Filter it into a bowl so as to remove any left-out coconut pieces.
  21. Press the sieve gently with a spoon to filter it better.
  22. Add 2 tablespoons full of sugar into the bowl.
  23. Mix it well.
  24. Our sweetened Coconut milk sauce is ready.
  25. Check the Idli cooker for our Idiyappam.
  26. When cooked, take out the Idli plates.
  27. Separate the idiyappam from the plate and serve it in traditional south Indian Banana leaf.
