Preparation /Follow the Steps:
- Let us start preparing our perfect Kerala Idiyappam. First take 1 cup rice flour.
- Sieve the rice flour into a fresh bowl.
- Add ¼ tablespoon salt into the bowl.
- Add 1 tablespoon oil.
- Pour water that has been moderately warmed.
- Mix it all well. The mixture would start getting doughy.
- Knead the dough well.
- Our soft dough is ready.
- Now its time to give our dough a shape. Take a noodle mould and open its back.
- Pour ½ tablespoon oil into the Noodle mould for lubrication.
- Take some dough and turn it into a cylindrical shape.
- Insert the mould into the noodle mould.
- Close its back tightly.
- Take an Idli plate and press our noodled dough onto the plate.
- Place the plates inside an Idli cooker.
- Let it cook for 10 minutes.
- Add ¼ cup coconut pieces into a mixer-grinder.
- Add ½ cup water.
- Blend it well till you get a nice, soft and creamy mix.
- Filter it into a bowl so as to remove any left-out coconut pieces.
- Press the sieve gently with a spoon to filter it better.
- Add 2 tablespoons full of sugar into the bowl.
- Mix it well.
- Our sweetened Coconut milk sauce is ready.
- Check the Idli cooker for our Idiyappam.
- When cooked, take out the Idli plates.
- Separate the idiyappam from the plate and serve it in traditional south Indian Banana leaf.
- Serve it with the sweetened coconut milk sauce. Your authentic south Indian dish is ready to be served.
