Murmura Laddu is made out of two main ingredients: Murmura (Puffed rice) and Jaggery. Murmura or puffed rice is an aerated form of plain rice which is famous around the subcontinent of India as a healthy breakfast ingredient. It is a light and healthy munch that has almost all the benefits of rice. It has a crunchy texture and it is known to adapt the flavours of whatever dish it is put into. Hence, with the help of jaggery, it can be turned into a delicious dessert as well. Jaggery again, is a form of unrefined sugar. It is used as a sweetener in Indian cuisines, especially in desserts. Recipe Instructions of Murmura Laddu Recipe:

Preparation:

  1. Take two cups Murmura (Puffed rice) and add them to a fresh pan.
  2. Dry roast the Murmura on low flame setting.
  3. You will notice the soft Murmura turning crisp and strong.
  4. When this happens, turn off the flame and keep the Murmura aside.
  5. Take a fresh pan and add 1 tablespoon of ghee to it.
  6. Add ½ a cup jaggery to the pan.
  7. Stir continuously so as to flatten out the jaggery.
  8. Let the jaggery melt uniformly.
  9. Continue stirring the melted jaggery on low flame.
  10. To check if the consistency of jaggery is appropriate for the laddus, take some water and drop some of this sugar syrup in it.
  11. Try forming a round ball with the water dipped syrup.
  12. If your jaggery forms a round ball with ease, it has perfect consistency and is ready to be rolled into tasty ladddus.
  13. To your pan of melted jaggery, add the roasted Murmuras gently.
  14. Mix the Murmura with the jaggery. In the process, do not mash any murmura.
  15. Mix till the murmuras are coated completely with jaggery.
  16. Let them rest. When the murmuras have cooled to a temperature that is a bit higher than the room temperature, start making the laddus.
  17. To give this coated murmura a laddu like shape, pick up a fistful and give them a ball sized shape.
  18. Keep rolling till they get a perfect laddu shape.
  19. Your delicious murmura laddu are going to leave everyone murmuring with their deliciousness.
