Being very popular in the south as well as western India, medu vadas make an excellent breakfast, with being healthy they also are very filling, mostly served with coconut chutney and sambhar.  Medu vada or sambhar vada are basically vadas made of urad dal (skinless black lentils). They can also be prepared for the main course dish in a meal. These vadas are not even spicy so can be served to toddlers as well.

  • 2 cups soaked (for 2 hours) urad dal
  • ¼ tsp baking sodaa
  • 1 tsp salt
  • 1 tsp pepper powder
  • As required oil

Recipe Instructions of  Medu Vada Recipe or Easy Uzhunnu Vada:

Preparation:

  1. Take a bowl and soak 2 cups of urad dal in it for about 2-3 hours.
  2. After 3 hours, wash it, transfer the lentils into a grinding jar.
  3. Grind the paste for about 2-3 minutes in breaks of 1 minute.
  4. Make a smooth thick paste of the urad dal, make sure you don’t add a lot of water to it.
  5. Transfer the thick paste to a bowl, and you will have the basic dough for the vadas ready.
  6. Add 1 teaspoon of pepper powder to the bowl.
  7. Now, add 1 teaspoon of salt to the bowl.
  8. Next, add ¼ teaspoon of baking powder to the bowl.
  9. Mix the dough well in the bowl.
  10. Make sure there are no lumps in the dough or any lentil seeds left non-grinded.
  11. Now, take a pan or a kadhai and pour some oil in it to fry the vadas. Make a ball sized dough and place it on the inverted side of a round spoon.
  12. Slightly flatten the dough on the spoon with your hands.
  13. Make a small hole in between the dough with your hands.
  14. Now, turn the spoon and deep fry it in the oil, make sure the oil is hot and nice.
  15. Keep the flame of the burner medium, and make more vadas with the same process.
  16. Stir the frying vadas occasionally in the kadhai slowly and make sure they don’t stick to each other.
  17. Flip the vadas slowly in the kadhai trying not to spill the oil, fry them nicely.
  18. Fry the vadas till they get a nice and golden.
  19. Remove the vadas out of the pan, and put them on a plate. You could always use tissues to soak the extra oil on them.
  20. Mouth-watering and crispy medu vadas are ready to serve. Enjoy!
