1 cup RICE FLOUR
3 cup 1 HOUR Soaked SAGO
1 cup 1 HOUR SOAKED MOONG DAL
1 / 4 cup LIGHT GRINDED MIRCHI
1 tbsp GRINDED GREEN CHILI & GINGER
1/4 cup SEASAME SEEDS
1/4 tsp CUMIN SEEDS
1 tsp SALT
11/2 tbsp HOT GHEE
handful CURRY LEAVES

First you take large bowl and add 3 cup of rice flour.

Soak sago for at least 1 hour, or you can soak it with hot water just 20 mins to do this step fast.

Add soaked moongdal, here also to do same above step, soak it in normal water 1 hour or soak it with hot water just 20 mins.

Add lightly grinded mirchi , don’t grind it like powder type, it won’t give better masala taste.

Add 1 tbsp Grinded green chilli and ginger paste for better spicy. Seasame seeds is the optional, you can add it or can skip it, better to add for the new taste how we got.

Next add salt, cumin seeds, hot ghee, curry leaves as well.

Mix up everything well and add require water, here better to add hot water and knead soft dough. Make sure all are combined well.

Start making balls and use polythene oil paper to fatten it, here you can use any of the tricks to make round flatten the dough.

Chekkalu dough must be as thin as possible otherwise it won’t be very crunchy, once done thin round flatten then remove from the polythene oil.

Pour oil as require in the kadai and heat up in medium flame and drop it carefully.

Deep fry and make sure here the heat should be in medium flame and oil must be hot

When masala chekkalu turn crisp and golden then flip into another side also to get as the same fry

Once bubbles stopped then it is well cooked, just keep this trick in the mind and do it all the masala chekkalu same as well and now transfer to a wide utensil or colander. After heat went down on them then it will get crisp, so keep it cool just 15 mins

Now tasty masala chekkalu is ready and store it in air tight after the cool, easily you can store this masala chekkalu atleast 2 to 3 months
