Ingredients

Adjust Servings:
3 glass WATER
1 tsp SALT
1/2 tbsp OIL
1/2 tsp SHAHI JEERA
3 CLOVES
3 BAY LEAF
1.5 glass BASMATI RICE
2 tbsp OIL
1 tbsp CASHEW NUTS
1/2 cup ONION
2 tbsp GHEE
3 CARDAMOM
2 CINNAMON
3 CLOVES
2 STAR ANISE
1 ONION
1 TOMATO
1 tsp GINGER PASTE
1 tsp GARLIC PASTE
1 GREEN CHILLI
1 tsp SALT
1 CARROT
all are boiled CAULIFLOWER, POTATO, BEANS, GREEN PEAS
half handful MINT LEAVES
half handful CORIANDER LEAVES
1/2 cup CURD
half LEMON
1/4 tsp TURMERIC POWDER
2 tsp MIRCHI POWDER
2 tsp BIRYANI MASALA
1/2 cup COCONUT MILK
1/4 cup SAFFROM+MILK ADDED

One such biryani comes from Thalasseri. Kerala Thalassery Veg Dum Birayani is famous for its intricate balance between the wide range of flavours it holds. Made from a mix of healthy boiled vegetables, flavourful and healthy basmati and an arsenal of spices, this dish truly stands with the phrase- ‘explosion in every bite’.

Recipe Instructions of Kerala Thalassery Veg Dum Biriyani:

Preparation Of Kerala Thalassery Birayani:

  1. In a container, pour 3 glasses of drinking water. Subject this container to a stove flame.
  2. Add 1 teaspoon salt to the container containing the water.
  3. Add ½ tablespoon of oil to the container.
  4. Add ½ teaspoon of Shahi Jeera into the water.
  5. Add 3 cloves to the container.
  6. Put 3 Bay leaves into the container.
  7. Take about 1.5 glasses of leaned Basmati rice.
  8. Mix it well with the water and other spices present in the container.
  9. Your rice has cooked well.
  10. Cover it with a lid and let it rest.
  11. To a fresh pan, add 2 tablespoons of oil.
  12. Take 1 tablespoon of cashew nuts and roast them in the oil on medium flame. Pick them out one done.
  13. Take ½ a cup onion (chopped) and add it to the pan.
  14. Fry the onions well and take them out when done.
  15. Add 2 tablespoons of ghee to the pan.
  16. Take 3 pieces of clove, 2-cinnamon sticks, 3-cardamoms and 2-star anise and put them in the oil.
  17. Take 1 chopped onion and add that to the oil as well.
  18. Sauté the ingredients well.
  19. Add 1 chopped tomato to the pan.
  20. Add 1 teaspoon of ginger paste to the pan.
  21. Add 1 teaspoon of garlic paste to the pan.
  22. Put 1 Green chilli to the mix.
  23. Add 1 sliced carrot of small size.
  24. Sauté the vegetables well.
  25. Add boiled cauliflower, potato, beans and green peas.
  26. Add half a handful of Mint leaves
  27. Now, Add half a handful of coriander leaves.
  28. Squeeze out half a lemon over the pan.
  29. Put ½ a cup of curd into the mix.
  30. Add 1 teaspoon of salt to the mix.
  31. Add ¼ teaspoon of turmeric powder to the pan.
  32. Add 1 teaspoon Mirchi powder for added spice.
  33. Add 2 teaspoons of Biryani Masala to silver line our Biryani.
  34. Mix these ingredients well.
  35. Let the vegetables cook and blend with the spices on a medium flame.
  36. Add ½ a cup of coconut milk to the mix.
  37. Stir with a spatula.
  38. Take some of this gravy and put it in a bowl.
  39. Now its time to add layers in our biryani.
  40. Add the boiled Basmati Rice to the pan.
  41. Place the fried onion on top of this layer of rice.
  42. Add a few mint leaves for garnish.
  43. Add some coriander leaves on the top.
  44. Mix saffron in some milk and pour the mixture into the pan.
  45. Add the gravy that we had kept aside on top of layer of rice.
  46. Repeat the previous steps to create another layer of rice on top of gravy.
  47. Add some ghee.
  48. Add the cashews that we roasted earlier.
  49. Cook the biryani on low flame for 5-8 minutes.
  50. Turn off the gas. Your delicious biryani is ready to be served.
  51. To serve the biryani, pick up the basmati along with the vegetable layers.
  52. Serve your Kerala Thalasseri Veg Dum Biriyani with lemon, onion and green chilli for a perfect meal.
