Recipe Instructions of Kerala Thalassery Veg Dum Biriyani:
Preparation Of Kerala Thalassery Birayani:
- In a container, pour 3 glasses of drinking water. Subject this container to a stove flame.
- Add 1 teaspoon salt to the container containing the water.
- Add ½ tablespoon of oil to the container.
- Add ½ teaspoon of Shahi Jeera into the water.
- Add 3 cloves to the container.
- Put 3 Bay leaves into the container.
- Take about 1.5 glasses of leaned Basmati rice.
- Mix it well with the water and other spices present in the container.
- Your rice has cooked well.
- Cover it with a lid and let it rest.
- To a fresh pan, add 2 tablespoons of oil.
- Take 1 tablespoon of cashew nuts and roast them in the oil on medium flame. Pick them out one done.
- Take ½ a cup onion (chopped) and add it to the pan.
- Fry the onions well and take them out when done.
- Add 2 tablespoons of ghee to the pan.
- Take 3 pieces of clove, 2-cinnamon sticks, 3-cardamoms and 2-star anise and put them in the oil.
- Take 1 chopped onion and add that to the oil as well.
- Sauté the ingredients well.
- Add 1 chopped tomato to the pan.
- Add 1 teaspoon of ginger paste to the pan.
- Add 1 teaspoon of garlic paste to the pan.
- Put 1 Green chilli to the mix.
- Add 1 sliced carrot of small size.
- Sauté the vegetables well.
- Add boiled cauliflower, potato, beans and green peas.
- Add half a handful of Mint leaves
- Now, Add half a handful of coriander leaves.
- Squeeze out half a lemon over the pan.
- Put ½ a cup of curd into the mix.
- Add 1 teaspoon of salt to the mix.
- Add ¼ teaspoon of turmeric powder to the pan.
- Add 1 teaspoon Mirchi powder for added spice.
- Add 2 teaspoons of Biryani Masala to silver line our Biryani.
- Mix these ingredients well.
- Let the vegetables cook and blend with the spices on a medium flame.
- Add ½ a cup of coconut milk to the mix.
- Stir with a spatula.
- Take some of this gravy and put it in a bowl.
- Now its time to add layers in our biryani.
- Add the boiled Basmati Rice to the pan.
- Place the fried onion on top of this layer of rice.
- Add a few mint leaves for garnish.
- Add some coriander leaves on the top.
- Mix saffron in some milk and pour the mixture into the pan.
- Add the gravy that we had kept aside on top of layer of rice.
- Repeat the previous steps to create another layer of rice on top of gravy.
- Add some ghee.
- Add the cashews that we roasted earlier.
- Cook the biryani on low flame for 5-8 minutes.
- Turn off the gas. Your delicious biryani is ready to be served.
- To serve the biryani, pick up the basmati along with the vegetable layers.
- Serve your Kerala Thalasseri Veg Dum Biriyani with lemon, onion and green chilli for a perfect meal.
