However, just as how Kerala is filled with culture, their cuisines are also filled with exquisite dishes. Kerala Parotta or Malabar Parotta is one such delicacy.

Mostly served as a side bread for a curry or stew, Kerala Parotta is famous for its deliciousness trapped within its dreamy layers. Parotta is a multi-layered Maida flour bread that can be easily prepared in any household kitchen to serve with a curry that you have made for any special occasion. Recipe Instructions of Perfect Kerala Paratha Recipe:

Preparation of Kerala Parotta :

  1. Take a fresh bowl and add 2 cups of Maida to it.
  2. Add 1 tablespoon Sugar powder to the bowl.
  3. Add ½ a tablespoon of salt to the mix.
  4. Add 1 tablespoon of Oil to the bowl.
  5. Mix the ingredients of the bowl well.
  6. Add enough water so as to knead the flour into a dough.
  7. Start kneading the dough.
  8. Dough starts getting sticky.
  9. Continue kneading the dough for another 10 minutes or more.
  10. Prepare a soft dough.
  11. Apply melted butter on the dough’s surface.
  12. Cover the bowl with a lid and Let it rest for 1 hour.
  13. When an hour has passed, uncover the bowl and check for fluffiness.
  14. Knead it once again.
  15. Knead it gently. If you find it troublesome to knead the dough in a bowl, you can also continue with the process on a surface.
  16. Hence, prepare a super soft dough.
  17. Cut the dough in pieces.
  18. With these pieces of our super soft dough, make ball shaped moulds.
  19. Our Dough balls are prepared. Place them in a bowl.
  20. Again, apply butter over the dough and let it rest for another hour.
  21. Now, let us start with cooking this dough into delicious Parotta.
  22. Apply a thin layer of oil on a surface.
  23. Place the super soft dough on this surface and press lightly.
  24. Roll it gently with a roller for even results.
  25. Roll it into a thin disc like shape.
  26. Make cuts in the centre of this disc.
  27. With these cuts as your reference, roll the rest of the dough into a thread-like structure.
  28. Roll your rope together to form a spiral shape.
  29. Take another ball of our rested super soft dough and roll it into a thin sheet. Cut thin strips out of this sheet.
  30. Bring these strips of dough close together.
  31. Pull the concentrated strip slightly so as to stretch it.
  32. Roll the strip into another spiral.
  33. With your palm, slightly flatten this spiral.
  34. Flatten it into a disc.
  35. Prepare a hot tawa and set it on medium flame. Place your parotta disc on the tawa.
  36. Add 1 tablespoon oil through its circumference.
  37. Periodically flip over.
  38. Press and cook the dough into a crispy delicious Parotta.
  39. The tough turns brown to show preparedness.
  40. Place your perfectly cooked Parotta for serving. Push it close to separate the layers.
  41. Serve these gourmet crispy discs as a perfect side for any curry.
