Recipe Instructions of Kerala Milk Cake Recipe:
Preparation of Milk Cake:
- Add ½ a cup milk powder to a fresh bowl.
- Add 1 cup Maida flour to the bowl.
- Add 1/4 teaspoon of Cardamom Powder to the bowl.
- Put ¼ teaspoon of baking soda to the bowl.
- Add 1 tablespoon full of ghee to the bowl.
- With your hands, crumble lumps (if any) and mix these ingredients together.
- Prepare a moist flour for your Milk cake.
- Add sufficient amount of warm milk in order to prepare a dough for our cakes.
- Knead the flour into a dough.
- During the kneading process, the dough will first take a sticky outer texture.
- However, towards the end you will have prepared a smooth dough.
- Take your smooth dough and flatten it on a surface.
- Roll the flattened dough gently with a roller.
- Keep its girth a bit thick.
- With a knife or a cutter, cut the dough into several pieces by making symmetric lines.
- Check the thickness of every piece thus formed.
- Place the pieces separately on a plate.
- One by one, put these pieces in hot oil for deep frying.
- Ensure that the flame has been set on a low flame setting.
- Flip the pieces to fry them uniformly.
- You will soon notice a colour change. Your pieces will now be golden brown in colour.
- After they have fried, place the pieces on a plate and drain off the excess oil using tissue paper.
- In a fresh pan, add ½ cup sugar.
- Pour 1 cup of water into the pan.
- Add 2 cardamom seeds into the pan.
- Stir these ingredients well in order to get a uniform taste and texture.
- Wait for the sugar to dissolve into the water.
- After the sugar has dissolved, let the water boil for 3-4 minutes.
- The water will turn into a sugar syrup that has a sticky consistency.
- Your sugar syrup is ready to sweeten the cakes.
- Dip the sour cakes that we prepared earlier inside the sugar syrup.
- Allow them to soak the sugar syrup completely. Cover the lid and let them rest.
- Uncover when they have swollen up in size.
- the sugar syrup would have made them sweet to their core.
- Your delicious Kerala Milk cake are ready to be served.
