Recipe Instructions of Karasu Recipe in Tamil Style / Kara Boondi Recipe in South Indian Style

Preparation Karasu Recipe:

  1. To a fresh bowl, add 1 cup full of Besan/Gram Flour.
  2. Add 1/3rd of a cup of rice flour to the bowl.
  3. Add 1 teaspoon full of salt to the bowl.
  4. Add ¼ teaspoon of baking soda for fermentation.
  5. Add 1 teaspoon Mirchi Powder to the bowl.
  6. Put a pinch of Hing into the bowl.
  7. Add sufficient amount of water.
  8. Mix the ingredients inside the bowl well.
  9. Keep whisking till you get a smooth batter.
  10. Ensure your batter has no lumps.
  11. This is a thick and consistent batter.
  12. Whenever you have to fry Besan Batter, use ladle with holes on its face.
  13. Take some batter and gently spread it across the face of the ladle. Spread it slowly by tapping on it.
  14. Now that the Besan Batter is in the fryer, keep stirring occasionally.
  15. Your batter will turn into small crispy balls that are golden in colour.
  16. Take it out when ready. Your Bondi is ready.
  17. Now add some peanuts to the frying oil and fry them well.
  18. Take some cashews and fry them on a low flame setting.
  19. Take the cashews out when they have changed their colour from white to golden.
  20. Take a few curry leaves and fry them in the oil to make them crispy.
  21. In a bowl, one by one place all our prepared ingredients. Starting from Bondi, move on to peanuts then cashew and in the end place the fried curry leaves.
  22. Sprinkle 1 teaspoon Mirchi Powder and ¼ teaspoon of salt over the bowl.
  23. Mix all the contents of the bowl.
  24. Your delicious and healthy karasu is ready to be served.

Notes:
• If you don’t have a ladle with holes at home for frying the boondi, you can achieve similar results by taking a thick cloth and making holes in it. Just make sure the holes are not huge in diameter and has been properly cleaned before use.
