What is the simplest thing to cook on a lazy day? Potatoes? What if we can get the ease of cooking potatoes with the amazing taste of egg. The first thing that pops up in one’s mind hearing “egg” is probably the ever-delicious egg curry or the easy to make egg bhurji.
Egg masala curry recipe is quite popular in India and is cooked in several ways in several parts of the country. Some versions are very spicy! The recipe that I’m sharing today is more or less of the egg curry that I grew up eating. In fact, I even have made few changes here and there.

After you have accumulated the ingredients, follow the steps below!
Recipe Instructions of Aloo Egg Masala Curry:
Preparation:
1: Take a small mixer grinder jar and put 5 “khadi laal Mirchi” or red chillis in it.
2: Cut 1 small sized tomato into big pieces and put it with Mirchi or chillis.
3: Close the jar with its lid and grind them well.
4: You will get a thick red paste.
5: Place a cooking pan on the stove and pour 1 tablespoon of oil on it.
6: Gently break 2 eggs and pour the yolk into the pan.
7: Add ¼ teaspoon powdered pepper to the pan. Try to spread it out across the ingredients present.
8: Add ¼ teaspoon salt.
9: Now, fry the yolk on a medium flame.
10: Take out the yellowish semi-solid fried eggs on a plate.
11: Wash the pan. Pour a teaspoon of oil into it.
12: Add 1 “dalchini” or cinnamon.
13: Chop an onion into small pieces. Add them to the pan.
14: Saute (quickly fry or “talein”) the ingredients of the pan well.
15: After the onion is slightly fried, add 1 teaspoon of ginger-garlic paste.
16: Mix it well.
17: Wait till you see a color change. A slight brown color is your cue.
18: It is time to add Mirchi + tomato paste (which we made in Step 4) to the pan.
19: Add ½ teaspoon salt to the pan.
20: Add ¼ teaspoon turmeric powder.
21: Mix the paste well.
22: Fry this mixture for about 2 minutes.
23: Add 1 teaspoon of Mirchi powder to the pan.
24: Put another 1 teaspoon of coriander powder.
25: Also, 1 teaspoon of garam masala is required to put in the pan.
26: Now, add 1 teaspoon of Kasoori Methi.
27: Mix the spices with the paste and fry them.
28: Cook the paste or curry on a medium flame.
29: Add the fried eggs (that we separated in Step 10) to the pan.
30: Add 1 cup of boiled potato too.
31: Mix them well.
32: Add 1 glass of water to ensure that the ingredients do not burn.
33: Put a lid on the pan and cook for 4-5 minutes.
34: Now, lift the lid.
35: Stir the items. Check if they seem uncooked. If not, pour it out in a bowl.
