Recipe Instructions of Spring Rolls Recipe:

Preparation of Spring Rolls:

  1. Take a fresh pan and add 1 tablespoon of oil to it.
  2. Add ¼ teaspoon of cumin seeds to the oil.
  3. Chop and add 1 onion to the pan.
  4. Saute it well.
  5. Add 1 diced Green chilli to the mix.
  6. Add 1 teaspoon of Ginger Garlic Paste, into the pan.
  7. Add ½ teaspoon salt to the pan.
  8. Add ¼ teaspoon of turmeric powder.
  9. Sauté the ingredients well.
  10. Cut a potato into little pieces and add it to the pan.
  11. Cover and Cook these ingredients for about 3 minutes on medium flame.
  12. Mix well.
  13. Add ½ teaspoon of red Chilli Powder.
  14. Take ¼ teaspoon Chat Masala and evenly spread it in across the pan.
  15. Mix well.
  16. Filling for your delicious crispy snack is prepared.
  17. Take 1 cup Maida flour and place the flour on a sieve.
  18. Add ½ a teaspoon of salt to it.
  19. Sieve these ingredients into a fresh bowl.
  20. Add 1 tablespoon of ghee to the bowl.
  21. Add 1 tablespoon of oil to the bowl.
  22. Using your hands, combine them well with the flour.
  23. Add as much water as necessary.
  24. Mix the water well.
  25. Try and knead a smooth dough.
  26. Dough for preparing the crispy covering is ready.
  27. Dust some Maida flour on a flat surface.
  28. Take a small ball of dough and place it on the surface.
  29. With a roller, roll this ball of dough gently.
  30. Continue rolling till you have a thin disc of your dough.
  31. Carefully pick it up so as to not distort its shape.
  32. Taking another dough ball, prepare another flattened disc.
  33. Apply some oil to it
  34. Place the first disc on this second one. Remember the oil was applied to the second one. Repeat this process till you have multiple discs piled on one another.
  35. Roll the bunch of discs piled together into a cylinder.
  36. Cut this cylindrical dough into even pieces of 2 cm each.
  37. Observe the cross-section. You will be able to notice the different layers this method has brought to your dough.
  38. Press each piece with the palm of your hand.
  39. Roll them again into slightly thin discs.
  40. Give it a square like shape.
  41. Add the Aloo Fry filling that was prepared earlier. Fill them with 2 tablespoons each.
  42. With a wet finger, caress those parts that are without a filling.
  43. Close it and seal it.
  44. Use the sharp end of a fork to make small pin sized holes at the end.
  45. The pouches are ready to put into a fryer.
  46. So, take a fresh pan and heat some oil. Drop your dough and filling pouches in the hot oil.
  47. Flip to fry evenly from both sides
  48. Turn the flame to a medium setting.
  49. The pouches will turn golden brown in colour after about 7 minutes.
  50. Take them out.
  51. Serve them fresh, serve them Hot of this Spring Rolls as well.
