Recipe Instructions of Chicken Dum Biryani in kadai:
Preparation of chicken dum biryani in kadai:
- Put a fresh pan on stove with some water in it.
- Put 4 Bay leaves into the pan.
- Add about 5 cloves to the water.
- Take ½ a tablespoon of Shahi Jeera and add it to the pan. Also add 1 green chilli.
- Add 1 tablespoon of oil into the mix followed by 1 tablespoon of salt.
- Cover the pan with a lid and let the water boil.
- Clean and add 2 glasses of clean Basmati rice when the water has reached boiling point.
- Let the rice cook till about 70% of the water has boiled.
- Cover the lid and let it rest.
- Take a fresh pan and add 3 tablespoons of ghee to it.
- Add 1 tablespoon oil to the pan.
- Chop and add 1 large sized onion.
- Sauté the onion well in ghee and oil.
- Onions will change colour to gold.
- Take them out separately on a plate.
- Now to the same pan, add 1 green chilli.
- Add ½ a kilo chicken to the pan.
- Add ½ a cup of curd to the chicken.
- Add ¼ tablespoon of turmeric powder and 2 tablespoons of Mirchi powder to the pan.
- Add 1 tablespoon of coriander powder and 3 tablespoons of Biryani Masala to the chicken
- Put 2 tablespoons of ginger garlic paste and 1 tablespoon of salt to the mix.
- Add half a handful of coriander leaves to the pan followed by half a handful of Mint leaves.
- Squeeze out half a lemon into the pan.
- Mix all these ingredients well.
- Fry the chicken for about 3 minutes on a medium flame.
- Add about ½ a glass of water.
- Again, mix well.
- Cook your chicken for about 7 more minutes. Your chicken is ready to be added to your biryani.
- Take a fresh pan and add 1 tablespoon of ghee to it.
- Add the boiled basmati rice and the fried onions into this fresh pan.
- Add coriander and mint leaves to your rice.
- Now add the chicken biryani gravy that we prepared earlier.
- Add 2 tablespoons of saffron milk. To prepare this saffron mixture, mix some saffron powder in some plain milk.
- Now repeat the preceding few steps. Start with again placing a layer of basmati rice over our finished layer.
- Add chicken, coriander, mint and saffron milk to this second layer of biryani.
- Cover up with aluminium foil and cook on low flame for 5-7 minutes.
- Uncover the lid. Your Chicken Dum Biryani in kadai is ready to be served.
