Recipe Instructions of Chicken Dum Biryani in kadai:

Preparation of chicken dum biryani in kadai:

  1. Put a fresh pan on stove with some water in it.
  2. Put 4 Bay leaves into the pan.
  3. Add about 5 cloves to the water.
  4. Take ½ a tablespoon of Shahi Jeera and add it to the pan. Also add 1 green chilli.
  5. Add 1 tablespoon of oil into the mix followed by 1 tablespoon of salt.
  6. Cover the pan with a lid and let the water boil.
  7. Clean and add 2 glasses of clean Basmati rice when the water has reached boiling point.
  8. Let the rice cook till about 70% of the water has boiled.
  9. Cover the lid and let it rest.
  10. Take a fresh pan and add 3 tablespoons of ghee to it.
  11. Add 1 tablespoon oil to the pan.
  12. Chop and add 1 large sized onion.
  13. Sauté the onion well in ghee and oil.
  14. Onions will change colour to gold.
  15. Take them out separately on a plate.
  16. Now to the same pan, add 1 green chilli.
  17. Add ½ a kilo chicken to the pan.
  18. Add ½ a cup of curd to the chicken.
  19. Add ¼ tablespoon of turmeric powder and 2 tablespoons of Mirchi powder to the pan.
  20. Add 1 tablespoon of coriander powder and 3 tablespoons of Biryani Masala to the chicken
  21. Put 2 tablespoons of ginger garlic paste and 1 tablespoon of salt to the mix.
  22. Add half a handful of coriander leaves to the pan followed by half a handful of Mint leaves.
  23. Squeeze out half a lemon into the pan.
  24. Mix all these ingredients well.
  25. Fry the chicken for about 3 minutes on a medium flame.
  26. Add about ½ a glass of water.
  27. Again, mix well.
  28. Cook your chicken for about 7 more minutes. Your chicken is ready to be added to your biryani.
  29. Take a fresh pan and add 1 tablespoon of ghee to it.
  30. Add the boiled basmati rice and the fried onions into this fresh pan.
  31. Add coriander and mint leaves to your rice.
  32. Now add the chicken biryani gravy that we prepared earlier.
  33. Add 2 tablespoons of saffron milk. To prepare this saffron mixture, mix some saffron powder in some plain milk.
  34. Now repeat the preceding few steps. Start with again placing a layer of basmati rice over our finished layer.
  35. Add chicken, coriander, mint and saffron milk to this second layer of biryani.
  36. Cover up with aluminium foil and cook on low flame for 5-7 minutes.
  37. Uncover the lid. Your Chicken Dum Biryani in kadai is ready to be served.
  38. Serve chicken dum biryani in kadai with boiled eggs, onion, gravy for a wholesome meal.
