The ingredients used in the carrot cake are very simple and quite a few of them are already available in your kitchen. There aren’t any cream or fancy frostings used. Just a loaf of bread which has the sweetness of carrots and sugar topped with raisins. - Take one medium sized carrot.
- Chop it into smaller pieces.
- Shred it fine in a shredder.
- Add ½ cup sugar into a bowl.
- Break an egg inside the bowl.
- Add ¼ tsp baking soda.
- Add a pinch of salt.
- Add ¼ tsp cinnamon powder to the bowl.
- Put a few drops of orange flavour.
- Add 1 tsp butter.
- Add ¼ cup oil.
- Using a whisk, mix all the ingredients well.
- A thin and smooth batter will be formed.
- Add mashed carrot to the batter.
- Pour 2 tbsp of milk into the bowl.
- Add 2/3 cup all purpose (Maida) flour.
- Again, mix well to form a smooth batter.
- Take one medium sized cake mould.
- Apply oil all over it.
- Pour the batter into the cake mould.
- Add some raisins to taste.
- Place the mould inside the microwave.
- Set the microwave in a micro-convection
- Let it bake for 30-35 minutes.
- After time is over, take out the mould with the help of oven mitts.
- With the help of a toothpick, prick inside the cake to check if it is baked fully.
- If there is no stickiness on the toothpick, it means the cake is baked properly.
