Vankaya fry or baingan fry is a Andhra cuisine side dish. Andhra food is known to be spicy and highly flavoured. These dishes are used as sides for various south Indian dishes like rasam and sambhar.

Baingan is known as Vankaya in Telugu. This brinjal fry or baingan fry can be made in various ways, every family has its own recipe for this brinjal fry. Baingan fry is also served as side dishes in Andhra restaurants, but they are usually very.

Ingredients of Brinjal Fry Recipe or Baingan Fry

  • 1 big brinjal (eggplant)
  • 2 tsp maida flour
  • 2 tsp corn flour
  • 1 tsp besan flour
  • ¼ tsp turmeric powder
  • 1 tsp Mirchi powder
  • ½ tsp salt
  • 1 tsp ginger garlic paste
  • 1 tsp garam masala
  • 1 tsp kasuri methi
  • 1 tbsp oil
  • As required oil for frying
  • As required water

Recipe Instructions of  Brinjal Fry or Baingan Fry:

Preparation: Follow the steps

  1. Take 1 big brinjal (eggplant).
  2. Start slicing the eggplant. Make sure the slices are thick.
  3. Put all the slices in a plate.
  4. Take a big bowl and out 2 teaspoons of maida in it.
  5. Next, add 2 teaspoons of corn flour in it.
  6. Add 1 teaspoon of besan in the bowl.
  7. Now, add 1/4th teaspoon of turmeric powder in the bowl.
  8. Add 1 teaspoon of Mirchi powder in the bowl.
  9. Add ½ teaspoon of salt in the bowl.
  10. Next, add 1 teaspoon of ginger garlic paste in the bowl.
  11. Now, add 1 teaspoon of garam masala in the bowl.
  12. Add 1 teaspoon of kasuri methi in the bowl.
  13. Now, add 1 tablespoon of oil in the bowl.
  14. Mix and combine these ingredients well, try using your hands while mixing.
  15. Add water in small portions in the bowl to make a batter.
  16. Mix the ingredients well with the batter, make sure there are no lumps in the batter.
  17. Masala paste for baingan fry in ready.
  18. Now, take 1 sliced baingan and put in the bowl. Coat the baingan with the masala paste. Make sure you coat the baingan slice properly.
  19. Following the steps coat all the baingan slices with the paste. And keep it aside to rest for atleast 15-20 minutes.
  20. Take a pan and pour some oil in it to fry the slices. Take 1 coated slice and put in the pan. Make sure the oil is hot and nice.
  21. Following the same process, put a few of slices in the pan, make sure to fry both the sides evenly on a medium flame.
  22. Stir and flip the slices till they look golden and fried.
  23. Take out the fries out of the oil and strain the extra oil off.
  24. Put the fried slices in plate, you could always use some tissues to soak the extra oil.
