You must have some overripe bananas in your fridge that nobody wants to eat. Well, here is a recipe that will transform those ugly bananas into a finger-licking delicacy and you will be the star chef of home.
Banana bread is so moist and tender with the super- sweetness of bananas that it’s too hard to resist yourself from eating. The beauty of this recipe is that you don’t need a fancy mixer or any complex ingredients. Just a banana, an egg and baking soda will do wonders. You can find almost all the ingredients in your kitchen. Just mix all of them in a bowl and bake in the oven and you are done. When you take out this banana bread from the microwave, its crust is golden brown in colour and delightfully crispy. Though this crispiness of crust softens once you store the banana bread, its tenderness and moist texture with a sweet flavour remains as it is.
The main ingredient of this recipe is banana that is easily available anywhere and banana has lots of nutritious powers too. We usually buy those bananas which are fresh looking and have skin still green. As time passes, skin colour gets changed into yellow and flesh gets more softened. Further, skin colour changes to brown and flesh becomes softer. At this point, most people throw away these bananas in the garbage wondering if their taste has gone bad, but they don’t realise how delicious it can become when mashed and baked into a bread.

Let’s prepare the batter (Banana Bread)
- Take one medium sized banana and peel the skin.
- Take a large sized bowl.
- Put the banana in the bowl and mash to a smooth consistency using a fork.
- When the banana is completely mashed, add ½ cup of sugar into it.
- Break one egg into the bowl.
- Add vanilla extract for delicious flavour.
- Pour 2 tablespoons of oil in the bowl.
- Add 1 tablespoon of butter to the bowl.
- Add ¼ teaspoon baking soda to it.
- Add a pinch of salt to taste.
- Pour 1 cup of milk or as required into the bowl.
- Stir well to form a frothy appearance.
- Now, add 2/3 cup all-purpose flour or Maida to it.
- Again, mix it well using a whisk.
- Mix until it turns into a smooth batter with no lumps in it.
- Take a cake mould.
- Grease it well with butter.
- Now, pour the batter into the mould.
- Pat the mould to adjust the level of batter.
Baking time –
- Preheat the oven for 5 minutes.
- Put the cake mould inside the oven.
- Bake it in a micro-convection setting for 30 minutes.
- When done, take out the mould carefully using some cloth or oven mitts.
- Prick inside the cake using a toothpick.
- If the toothpick comes out clean, that means your cake is completely baked.
- Your delicious banana bread is ready to serve.
- Slice it into pieces and enjoy.
