Baingan masala is a tasty recipe with a delicious gravy made by using some unique spices like poppy seeds, fennel seeds and peanuts. This curry can also be called as “masala baingan”, “vankaya masala” and different regions mention the same recipe with different terms and is also made with some slight variations.

Benefits of baingan or brinjal or Eggplant: These are best source of food for diabetic patients. They can control blood sugar levels and also blood pressure levels. They are rich in fibre and great anti- oxidants. They can help in preventing cancer. They also reduce the risk of heart diseases. Brinjal is always called as the “king of vegetables” and it is one of the tasty vegetables among all the vegetables.

Gather all the ingredients required, Follow the steps:

Recipe Instructions of Baingan Masala Recipe:

Preparation:

  1. Take a pan and put 1/3rd cup peanuts in it.
  2. Roast the peanuts in the pan on the medium flame.
  3. Roast the peanuts until they are brown.
  4. Cool down the peanuts and grind the peanuts in the grinder and transfer it to a bowl.
  5. Take 2 teaspoons coriander seeds in a pan.
  6. Now, 1 teaspoon of poppy seeds (gasagasalu) and 1 teaspoon of fennel seeds (sompu) in the pan.
  7. Add 1 cinnamon stick and 2 red dried mirchis in the pan.
  8. Roast all these ingredients on a low flame in the pan.
  9. The ingredients leave a great aroma.
  10. Let these ingredients cool down and then grind all of them and transfer it to a bowl.
  11. Now, add 2 teaspoon of oil in the pan.
  12. Next, add ½ teaspoon of mustard seeds in the oil, make sure the oil is nice.
  13. Now, add 1 big sized finely chopped onion in the pan.
  14. Add a handful of curry leaves in the pan.
  15. Sauté the ingredients well.
  16. Add 1 medium chopped tomato in the pan.
  17. Now, add 1 teaspoon of salt and 1/4th teaspoon of turmeric powder in the pan.
  18. Sauté everything well for a few minutes.
  19. The mixture in the pan turns aromatic after a few minutes.
  20. Take the brinjals, clean them, slit them from the centre and mark them.
  21. Add them to the pan and sauté them for about 2 minutes.
  22. Now, add 2 teaspoons of Mirchi powder in the pan.
  23. Add 1 small glass of water in the pan.
  24. Mix the gravy with water well and let the brinjals soak in the gravy.
  25. Cook the curry in the pan for about 7-8 minutes on a medium flame.
  26. Add 2 teaspoons of crushed garlic in the pan.
  27. Now add the grinded masala and peanuts we prepared in the early steps. Add the whole masala and grinded peanuts in the pan.
  28. Now, mix the ingredients well in the curry in the pan.
  29. Cook the curry for about 2-3 minutes in the pan on a medium flame.
  30. Check if the brinjals are cooked completely in the pan.
  31. The baingan masala curry is ready to serve.
