1 tbsp Amchur (Dry Mango Powder)

Heat a pan and dry roast coriander, cumin, fennel, dry red chilies, black pepper, cinnamon, bay leaves, cloves, green cardamoms, and black cardamom on low flame until aromatic.

Cool the roasted spices completely before grinding.

Grind into a smooth, fine powder using a spice grinder.

Add turmeric, dry ginger, garlic powder, onion powder, amchur, kasuri methi, sugar, rock salt, and Ajinomoto. Mix everything evenly.
