1 tbsp Cloves

2–3 Green Cardamoms

1 Black Cardamom

½ tsp Turmeric Powder

1 tbsp Dry Ginger Powder

1 tbsp Garlic Powder

1 tbsp Onion Powder

1 tbsp Amchur (Dry Mango Powder)

1 tbsp Kasuri Methi (Crushed)

1 tsp Ajinomoto / MSG (optional, for authentic taste)

1 tbsp Sugar (optional, balances flavors)

👩🍳 Preparation Method

Heat a pan and dry roast coriander, cumin, fennel, dry red chilies, black pepper, cinnamon, bay leaves, cloves, green cardamoms, and black cardamom on low flame until aromatic.

Cool the roasted spices completely before grinding.

Grind into a smooth, fine powder using a spice grinder.

Add turmeric, dry ginger, garlic powder, onion powder, amchur, kasuri methi, sugar, rock salt, and Ajinomoto. Mix everything evenly.

Store in an airtight glass jar – stays fresh for up to 2 months.
