Preparation Method

Roast Dals & Spices β Heat 1 tsp oil in a pan. Dry roast chana dal, urad dal, red chilies, coriander seeds, black pepper, and fenugreek until golden and aromatic.

Add Aromatics β Toss in curry leaves and sesame seeds; roast lightly.

Finish with Powders β Add turmeric powder and asafoetida, then turn off the flame. Let the mixture cool completely.

Grind with Tamarind β Blend the roasted mixture with tamarind and salt into a slightly coarse powder.
