Instant Sambar Powder Recipe

Ingredients for Instant Sambar Powder (1 Cup)

Toor Dal (Pigeon Pea) β ΒΌ cup 
- 
Chana Dal β 2 tbsp 
- 
Urad Dal β 2 tbsp 
- 
Coriander Seeds β 1 cup 
- 
Dry Red Chilies β 15β18 (adjust spice) 
- 
Cumin Seeds β 1 tbsp 
- 
Black Pepper β 1 tsp 
- 
Fenugreek Seeds β 1 tsp 
- 
Curry Leaves β 2 sprigs (sun-dried preferred) 
- 
Turmeric Powder β Β½ tsp 
- 
Asafoetida (Hing) β ΒΌ tsp 
- 
Oil β Β½ tsp (for roasting) 
Preparation Method
- 
Roast the Dals β In a pan, dry roast toor dal, chana dal, and urad dal on low flame until aromatic. Remove and keep aside. 
- 
Roast Spices β Roast coriander seeds until golden, then dry red chilies until crisp. 
- 
Add Aromatics β Add cumin seeds, fenugreek, black pepper, and curry leaves. Roast gently until fragrant. 
- 
Mix Powders β Switch off the flame, then add turmeric powder and asafoetida. Mix well. 
- 
Cool Completely β Let all roasted ingredients cool to room temperature. 
- 
Grind to Powder β Grind everything into a fine, smooth powder. 
- 
Store Fresh β Keep in an airtight jar. Stays fresh for up to 2 months.

Add 2 tsp to tamarind-based sambar while cooking.
