Ingredients for Universal Curry Masala

  • Coriander Seeds – 5 tbsp

  • Dry Red Chilies – 8 to 10 (adjust spice level)

  • Cumin Seeds – 2 tbsp

  • Fennel Seeds – 1 tbsp

  • Black Pepper – 1 tsp

  • Cinnamon Sticks – 2 (1 inch each)

  • Cloves – 6 to 7

  • Green Cardamoms – 4

  • Black Cardamom – 1

  • Bay Leaf – 1

  • Star Anise – 1

  • Mace (Javitri) – 1 piece

  • Nutmeg – a pinch

  • Dry Ginger Powder – 1 tsp

  • Turmeric Powder – 1 tsp

  • Amchur Powder (Dry Mango Powder) – 1 tsp

  • Salt – 1 tsp (optional)


Preparation Method

  1. Roast the Whole Spices
    Heat a pan and dry roast coriander, cumin, fennel, red chilies, peppercorns, cloves, cardamoms, cinnamon, bay leaf, star anise, mace, and nutmeg on low flame until aromatic.

  2. Cool & Grind
    Allow them to cool fully and grind into a fine powder.

  3. Add the Final Touch
    Mix in turmeric, dry ginger, amchur, and salt. Blend evenly.

  4. Store Fresh
    Transfer to an airtight jar – stays fresh for 2–3 months.
