🌿 Ingredients for Prawns Curry Masala Powder

  • 3 tbsp Coriander Seeds

  • 2 tbsp Dry Red Chilies (spicy)

  • 1 tbsp Kashmiri Red Chilies (for natural red color)

  • 1 tbsp Cumin Seeds

  • 1 tbsp Fennel Seeds

  • 1 tbsp Black Peppercorns

  • 1 tbsp Fenugreek Seeds (Methi)

  • 1 inch Cinnamon Stick

  • 4–5 Cloves

  • 2–3 Green Cardamoms

  • 1 Black Cardamom

  • 2 Bay Leaves

  • Few Curry Leaves (sun-dried or roasted)

  • 2 tbsp Dry Coconut (grated)

  • 1 tbsp Poppy Seeds (optional)

  • 1 tbsp Dry Ginger Powder

  • 1 tbsp Garlic Powder

  • 1 tbsp Onion Powder

  • 1 tbsp Turmeric Powder

  • 1 tbsp Rock Salt (or to taste)

  1. In a hot pan, dry roast coriander, cumin, fennel, black pepper, red chilies, Kashmiri chilies, fenugreek, cinnamon, cloves, cardamoms, bay leaves, and curry leaves on low flame until aromatic.

  2. Transfer to a plate and cool completely.

  3. In the same pan, roast dry coconut and poppy seeds until golden brown. Let them cool.

  4. Grind all roasted spices, coconut, and poppy seeds into a fine masala powder.

  5. Add turmeric, dry ginger, garlic powder, onion powder, and rock salt. Mix well.

  6. Store in a clean airtight jar – stays fresh for 1 month.
