Homemade Prawns Curry Masala Powder

1 tbsp Fenugreek Seeds (Methi)

1 inch Cinnamon Stick

2β3 Green Cardamoms

1 Black Cardamom

2 Bay Leaves

Few Curry Leaves (sun-dried or roasted)

2 tbsp Dry Coconut (grated)

1 tbsp Poppy Seeds (optional)

1 tbsp Dry Ginger Powder

1 tbsp Garlic Powder

1 tbsp Onion Powder

1 tbsp Turmeric Powder

In a hot pan, dry roast coriander, cumin, fennel, black pepper, red chilies, Kashmiri chilies, fenugreek, cinnamon, cloves, cardamoms, bay leaves, and curry leaves on low flame until aromatic.

Transfer to a plate and cool completely.

In the same pan, roast dry coconut and poppy seeds until golden brown. Let them cool.

Grind all roasted spices, coconut, and poppy seeds into a fine masala powder.

Add turmeric, dry ginger, garlic powder, onion powder, and rock salt. Mix well.
