  • 3 tbsp Coriander Seeds โ€“ the base spice for aroma

  • 2 tbsp Cumin Seeds โ€“ earthy & warm flavor

  • 1 tbsp Fennel Seeds โ€“ adds natural sweetness

  • 4โ€“5 Dry Red Chilies โ€“ for spice & color

  • 1 tsp Black Peppercorns โ€“ mild pungency

  • 6 Cloves โ€“ deep, robust flavor

  • 3 Green Cardamoms โ€“ subtle fragrance

  • 1 Black Cardamom โ€“ smoky touch

  • 1 inch Cinnamon Stick โ€“ warm sweetness

  • 1 Bay Leaf โ€“ earthy aroma

  • 2 tsp Dry Mango Powder (Amchur) โ€“ tangy twist

  • 1 tsp Dry Ginger Powder โ€“ zesty kick

  • ยฝ tsp Turmeric Powder โ€“ natural color & flavor

  • 1 tbsp Kasuri Methi (dried fenugreek leaves) โ€“ signature taste booster

  1. In a pan, dry roast coriander, cumin, fennel, red chilies, peppercorns, cloves, cardamoms, cinnamon, and bay leaf on low flame until fragrant.

  4. Mix in amchur, dry ginger, turmeric, kasuri methi, and salt.
