Homemade Hotel Style Sambar Powder

πΏ Ingredients (for 1 cup masala)

Coriander Seeds β 1 cup

Toor Dal (Pigeon Pea) β ΒΌ cup

Chana Dal β 2 tbsp

Urad Dal β 2 tbsp

Dry Red Chilies β 15 to 18

Cumin Seeds β 1 tbsp

Fenugreek Seeds β 1 tsp

Black Peppercorns β 1 tsp

Curry Leaves β 2 sprigs (sun-dried preferred)

Turmeric Powder β Β½ tsp

Asafoetida (Hing) β ΒΌ tsp

Oil β Β½ tsp (for roasting)

Heat a heavy kadai and add Β½ tsp oil.

First roast dals β fry toor dal, chana dal, and urad dal separately until golden and aromatic. Keep aside.

Roast spices β add coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, and dry red chilies; roast until fragrant.

Add curry leaves β toss in curry leaves and roast until crisp.

Switch off the flame and mix in turmeric powder and asafoetida.

Allow everything to cool completely.

Grind roasted ingredients into a fine, smooth powder.
