Homemade Hotel Style Sambar Powder

🌿 Ingredients (for 1 cup masala)

Coriander Seeds – 1 cup

Toor Dal (Pigeon Pea) – ¼ cup

Chana Dal – 2 tbsp

Urad Dal – 2 tbsp

Dry Red Chilies – 15 to 18

Cumin Seeds – 1 tbsp

Fenugreek Seeds – 1 tsp

Black Peppercorns – 1 tsp

Curry Leaves – 2 sprigs (sun-dried preferred)

Turmeric Powder – ½ tsp

Asafoetida (Hing) – ¼ tsp

Oil – ½ tsp (for roasting)
👩🍳 Preparation Method

Heat a heavy kadai and add ½ tsp oil.

First roast dals – fry toor dal, chana dal, and urad dal separately until golden and aromatic. Keep aside.

Roast spices – add coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, and dry red chilies; roast until fragrant.

Add curry leaves – toss in curry leaves and roast until crisp.

Switch off the flame and mix in turmeric powder and asafoetida.

Allow everything to cool completely.

Grind roasted ingredients into a fine, smooth powder.
