1 tbsp Kashmiri Red Chili Powder (for rich color)

Heat a pan and dry roast coriander, cumin, fennel, dry red chilies, peppercorns, cloves, cardamoms, cinnamon, bay leaf, and curry leaves on a low flame until they release a strong aroma.

Let the roasted spices cool completely.

Grind them into a fine powder using a mixer or spice grinder.

Add Kashmiri chili powder, dry ginger powder, garlic powder, turmeric, and salt. Mix well.
