Ingredients for Chicken Masala Powder

  • Bay Leaf – 1

  • Cinnamon Stick – 1 inch

  • Cloves – 6

  • Green Cardamoms – 3

  • Black Cardamom – 1

  • Coriander Seeds – 4 tbsp

  • Cumin Seeds – 2 tbsp

  • Fennel Seeds – 1 tsp

  • Black Pepper – 1 tsp

  • Dry Red Chilies – 8 to 10 (adjust spice)

  • Dry Ginger Powder – 1 tsp

  • Turmeric Powder – 1 tsp

  • Kasuri Methi (dried fenugreek leaves) – 1 tsp

  • Nutmeg – a small pinch (optional, for aroma)

  • Salt – 1 tsp (optional)


Preparation Method

  1. Roast the Whole Spices – On a low flame, dry roast bay leaf, cinnamon, cloves, cardamoms, black cardamom, coriander, cumin, fennel, black pepper, and red chilies until aromatic.

  2. Cool & Grind – Allow spices to cool fully, then grind into a fine powder using a blender.

  3. Add Final Touch – Mix in turmeric, dry ginger powder, kasuri methi, nutmeg, and salt.

  4. Store Fresh – Transfer to an airtight container. Stays fresh for 2–3 months.
