  • Coriander Seeds – 4 tbsp

  • Black Peppercorns – 1 tsp

  • Mustard Seeds – 1 tsp

  • Turmeric Powder – 1 tsp

  • Dry Ginger Powder – 1 tsp

  • Garlic Powder – 1 tsp (or 4–5 dried garlic flakes)

  • Curry Leaves (dried) – 8 to 10 leaves

  • Cloves – 4

  • Cinnamon Stick – 1 inch

  • Green Cardamoms – 2

  • Tamarind Powder (or dry mango powder) – 1 tsp

  • Salt – 1 tsp (optional)

  1. Roast Whole Spices:
