3 tbsp Coriander Seeds

2 tbsp Cumin Seeds

2 tbsp Fennel Seeds

1 tbsp Black Peppercorns

5β6 Dry Red Chilies

1 tbsp Kashmiri Chili Powder (for natural color)

5β6 Cloves
-
3 Green Cardamoms
-
1 Black Cardamom

2 Bay Leaves
-
2-inch Cinnamon Stick

1 Star Anise

Β½ Nutmeg (grated)

1 tsp Mace (Javitri)

1 tbsp Dry Ginger Powder

Β½ tsp Turmeric Powder

2 tbsp Kasuri Methi (dried fenugreek leaves)

Heat a pan and dry roast coriander, cumin, fennel, black pepper, red chilies, cloves, cardamoms, cinnamon, bay leaves, and star anise until aromatic.

Allow them to cool completely.

Grind roasted spices into a fine powder.

Add Kashmiri chili powder, nutmeg, mace, turmeric, dry ginger, and kasuri methi β blend once more for a smooth mix.

Store in an airtight glass jar β stays fresh for 2β3 months.
