Heat a heavy pan on low flame.

Dry roast coriander, fennel, cumin, black pepper, cinnamon, cloves, cardamoms, bay leaves, mace, nutmeg, and star anise until fragrant.

Roast red chilies, Kashmiri chilies, poppy seeds, and desiccated coconut separately until aromatic.

Allow all ingredients to cool completely.

Grind into a fine powder using a mixer.

Add turmeric powder, dry ginger powder, and kasuri methi. Blend once more for even mixing.
