Earlier, cakes were available only at the bakeries and we ordered only on special occasions. But now with simple recipes, it is so easier to bake the cake at your home.

When we think about cakes, what comes to our mind is layers of bread with rich frostings, covered with cream. And if you are a health-conscious person you always try to avoid these. But what if we tell you that there is a cake that you can eat without worrying about the calories. Yes, you read it right. There is such a type of cake. That’s carrot cake bread. Carrot cake is not only easy to make but is very healthy too. Carrots are highly nutritious. And to combine nutrition with taste. Oh, is this not a perfect combination?

The ingredients used in the carrot cake are very simple and quite a few of them are already available in your kitchen. There aren’t any cream or fancy frostings used. Just a loaf of bread which has the sweetness of carrots and sugar topped with raisins. It has the classic taste of carrots and also no rich cream frosting so you can easily have it for breakfast or after a meal. It lasts long at room temperature. So, you can wrap and put it in the freezer and eat later.

Ingredients

MAIN INGREDIENTS

  • 1 medium-sized carrot (shredded) 🥕
  • ½ cup sugar
  • 1 egg
  • ¼ tsp baking soda
  • A pinch of salt
  • ¼ tsp cinnamon powder
  • A few drops of orange flavor (optional)
  • 1 tsp butter
  • ¼ cup oil
  • 2 tbsp milk
  • ⅔ cup all-purpose flour (Maida)
  • Raisins (as per taste)

Instructions

  1. Prepare the Carrots:
    • Wash and peel the carrot.
    • Chop it into smaller pieces.
    • Shred it finely using a grater.
  2. Prepare the Batter:
    • In a mixing bowl, add ½ cup sugar.
    • Crack 1 egg into the bowl.
    • Add ¼ tsp baking soda, a pinch of salt, and ¼ tsp cinnamon powder.
    • Pour a few drops of orange flavor (optional for enhanced taste).
    • Add 1 tsp butter and ¼ cup oil.
    • Whisk everything well until you get a smooth mixture.
  3. Incorporate Dry Ingredients:
    • Add the shredded carrot to the batter and mix well.
    • Pour in 2 tbsp of milk.
    • Slowly add ⅔ cup all-purpose flour while stirring continuously.
    • Mix everything until you get a smooth, lump-free batter.
  4. Prepare the Cake Mould:
    • Take a medium-sized cake mould.
    • Grease it lightly with oil to prevent sticking.
  5. Bake the Cake:
    • Pour the batter into the mould.
    • Sprinkle raisins on top for added sweetness.
    • Preheat the microwave and set it to micro-convection mode.
    • Bake at 180°C (350°F) for 30-35 minutes.
  6. Check & Serve:
    • After baking, use oven mitts to take out the cake.
    • Insert a toothpick into the center of the cake.
    • If it comes out clean, the cake is perfectly baked.
    • Run a knife along the edges to loosen the cake from the mould.
    • Carefully remove it and let it cool.
    • Slice into pieces and enjoy your homemade carrot bread!

  1. Take one medium sized carrot.

  3. Shred it fine in a shredder.

  12. Using a whisk, mix all the ingredients well.
  13. A thin and smooth batter will be formed.

  15. Pour 2 tbsp of milk into the bowl.
  16. Add 2/3 cup all purpose (Maida) flour.
  17. Again, mix well to form a smooth batter.

  18. Take one medium sized cake mould.

  20. Pour the batter into the cake mould.

  23. Set the microwave in a micro-convection
  24. Let it bake for 30-35 minutes.
  25. After time is over, take out the mould with the help of oven mitts.
